Ingredients:

  • 2 kg. cucumbers
  • 3 dill umbrellas

  • 4 cloves of garlic

  • 3 mint leaves
  • 1.5 l. water
  • 2 tbsp. l. salt
  • 6 tbsp. l. Sahara
  • 2 tbsp. l. vinegar 9%

Preparation:

  1. Soak the cucumbers in cold water for two hours. Put dill, horseradish, garlic, a piece of hot pepper, currant, cherry and mint leaves at the bottom of a sterilized jar. Then place the cucumbers.
  2. Prepare marinade from water, salt, sugar and vinegar, bringing to a boil. Pour the marinade over the cucumbers and sterilize the jars for 15 minutes. After that, roll up the cans and turn them over.

Ingredients:

  • 10 kg of cucumbers,
  • 6 onions
  • 2 tsp dill seeds or
  • Fill: 6 liters of water, 2 liters of vinegar, 5-6 tbsp. l. salt, 2-4 tbsp. l. sugar, 15–20 black peppercorns.

Preparation:

Select cucumbers, wash thoroughly, dry, cut into slices, put in an enamel bowl, sprinkle with salt, dill or caraway seeds, ground pepper and finely chopped onions.

Then put this mixture tightly in the jars and pour over the hot marinade.

Pasteurize cans at a temperature of 85 ºС: half-liter cans - 10 minutes, liter cans - 15 minutes.

  • 500 g tomatoes

  • 1 l. water
  • 50 g salt
  • 80 g sugar

Preparation:

  1. Sterilize jars and lids. Place the cucumbers in the jars, placing them vertically, then place the tomatoes. Add spices and garlic.
  2. Prepare a marinade from water, salt and sugar, bring to a boil. Pour the jars with them twice (after the first pouring of the marinade, drain and boil again).
  3. Add vinegar and roll up. Then wrap the jars and store them in a dark place.

How to pickle cucumbers with gooseberries and garlic

Ingredients:

  • 4 kg. cucumbers
  • 0.5 kg. gooseberry
  • 1 head of garlic
  • 10 cherry leaves
  • 5 currant leaves
  • 1 horseradish leaf
  • 1 umbrella of dill
  • Peppercorns
  • Carnation
  • 1 horseradish root
  • 3.5 l. water
  • 2 tbsp. l. salt
  • 3 tbsp. l. Sahara
  • 80 g vinegar 9%

Preparation:

  1. Place the washed cucumbers in cold water for 3 hours. Stir in chopped garlic, horseradish root and finely chopped herbs. Put 1 tablespoon of this mixture in each sterilized jar. Then put cucumbers in jars, put a handful of gooseberries on top.
  2. Pour boiling water over the cucumbers and leave for 15 minutes. Drain the water from the cans into a container. Repeat the procedure twice.
  3. Then prepare a marinade from this water by adding pepper, cloves, salt, sugar, vinegar. Cook over low heat for 11 minutes. Pour the marinade over the cucumbers.
  4. Roll up the cans, turn over and wrap them up. After two days, turn them over and keep warm.

Well-developed ripe cucumbers thoroughly wash, peel, cut, remove seeds, cut into cubes.

Mix cucumbers with salt (for 1 kg of chopped cucumbers - 50 g of salt) and put in a cold place.

Then separate the cucumbers from the juice and put them in jars, sprinkling with mustard seeds and finely chopped onions.

Prepare a marinade from equal parts of water and table vinegar and pour hot into jars with cucumbers.

After 2 days, separate the cucumbers with a colander. Filter the marinade.

Dissolve 0.8 l of table vinegar and 150 g of sugar in 1 liter of marinade. Pour jars of cucumbers with boiling marinade and pasteurize at 85 ° C: half-liter jars - 10 minutes, liter and more - 12-15 minutes.

If the cucumbers will be stored at 0–5 ° C, pasteurization is not necessary.
